Is it possible to add field(s) to the Contact General tab?
I have need of a field that tracks which Unique Selling Point I am on with
an individual.  This field content would be numbered 1-6.

If fields cannot be added, how would you approach this dilemma?

Yes, you can modify the contact form. See http://www.slipstick.com/dev/forms.htm for general pointers and important common issues.
