Say I want to bulk email to everyone in my address book
who is listed under the category 'business'.  I can't
figure out how to do it.  Why would there be a category
sort if all you can do with contacts, once sorted, is
look at them on your screen?  Maybe I just can't figure
it out...

Don't use the address book. Go to your Contacts folder, switch to the By Category view, select the category you want to send to, then choose Actions | New Message to Contact.
