Is it possible to view contacts as "address cards"
or "detailed business cards" but grouped by "categories"?

I've explored sort by, filters, other settings and can't
seem to find a way.

No. Only table and timeline views can be grouped.

No, you can only "Group By" when you have a list/table view for contacts
