I'd like to add a new field to the contact properties,
and have it there when I click on "new contact". I've
manage to add a field, but can't get it to be there when
I click on "new contact". I'd like this new field to
appear with all existing contacts too. I'm sure there's a
set of instructions on how to do this, but I can't find
it anywhere...

You need to set the default MessageClass for contacts to your custom
MessageClass and also convert all existing items to use that
MessageClass.

See http://www.slipstick.com/dev/newdefaultform.htm for information on
how to do that.
