We are using Outlook 2000.  On Outlook 98 their was an
option to check, that would automatically save any sent
emails to that contact in their contact folder.
Additionally, it was a simple process to drag and drop
email's sent by the contact to be saved in the contact's
folder without creating a new contact.
How do we do this on Outlook 2000?

See http://www.slipstick.com/contacts/addauto.htm for various ways to save
senders or recipients as new contacts automatically, depending on your
version and configuration of Outlook.
