Is there any way of setting up a view in Outlook contacts to list them in
the order they were accessed.   Ie, I open a contact and it goes to the top
of the list?

Help gratefully received

Outlook doesn't record any information about "access." Of course, if you
dirty and save the item every time you open it, yoiu an use the Modified
date.
