I've delected a contact, but it's still there?

I had a contact that when I received an email from him his name would appear
surname/forename, even though I had changed it in the contact dialogue.
I permanently deleted it, but if I create a new email to him & type the
first 3 letters of his name it stills auto-completes his full name.

Where is Outlook still storing his info?
I've done a search but can't find anything.

Also, is there a way to change the emails I've already received to change
the way the listed?
i.e. forename/surname instead of the other way round.

That information is being pulled from the autocomplete cache. Delete it when
it pops up. Next time Outlook will use the version in your contacts folder.
