Keep the old address. There's no need to remove it. Just don't send to it.

Thanks for the reply. Sounds like this is my only
option. I like to use the "New Message to Contact" action
when sending to one or many contacts. Is there a way to
set this up so it only sends to the primary e-mail address
or will it always send to all e-mail addresses?

That command will always send to all email addresses. You'd have to delete
the one you want to omit.
