Change fields in Select Names Dialog Box

I would like to use the Filed By and Company Name fields
to select contacts rather than the fields in the dialog
box. Anyone know how to change the fields?

You can't. Your only options are to set the sort order to either "First,
Last" or "File As..."

Now if you had configured your File As... fields to show the company, you
would see that in the Address Book view.
