Sort order in AddressBook

I wonder if someone knows how to sort the contacts in the "Select Names"
window that opens when I click on the "To" button in a new message.
In this same window there are many "Contacts folders that appear that don't
exist anymore. How do I get rid of them.

Set your sort order and remove the old references in the same place:
Go to Tools > E-mail accounts > View or change existing directories or
address books > Outlook Address Book > Change. >

Thanks for the first part.
As for the second part, Sorting the address book. Is there no other option
in there? It is frustrating not to be able to search a contact by anything
else but first name, last nane. Just imagine I have over 4000 contacts in
different folders... Some of whom I remember only the company name...

Look again.
You have two options.
"FN, LN" and "File As..."
The latter lets you sort any way you want to. The way you've configured your
File As... fields is how the Outlook Address Book will sort.
