Change e-mail "display as" behavior (2003)

Can you tell me how to change the default behavior of the "Display As"
contacts field in Outlook 2003 (no exchange server)? Now, when I create
a contact's e-mail, the name or company name and address displays on e-
mails. I would prefer only the e-mail address appear.

Short of manually editing every contact entry to change, i.e.
    Display As: Lynn Cooper (lynn@bfwi.com)
to    Display As: lynn@bfwi.com

Can I change this default behavior?

No. You can only edit the Email Display As field manually.
