I want to be able to send my vcard to others, but I do not
want them to be able to click on the activities tab and
view my recent activities.  How can I block that tab from
others seeing that information?

There's no need. The vCard sends no such information. If you save it to your
own drive and open it in Notepage, you'll see that it's just a text file.
Outlook builds the Activities page on the fly from information in the user's
own folders.
