How can I get Outlook 2003 to set a mark/date / anything in the activites
section of the address card when I do a print function , like printing a
label. I can print the label fine no problem . I need Outlook to record the
fact that it did do something on that date.

You'll have to create a journal entry for that. Outlook doesn't monitor
printing activities.
