I got a new Laptop with Outlook 2003 running on the company Exchange Server.
I was formally running Outlook 2000 on my old PC. When the IT guys set up
my outlook account I found that when I searched for and email address in the
To: field by typing in all or part of a contacts name - it returns the full
version of the email address. (ie. for John Doe it returns
johndoe@whatever.com). I like it the other way it did it before by just
underlining John Doe if it found it as a valid address.
Furthermore, I looked at my contacts and outlooks has converted all of the
"Display as" fields to the longform email addresses. Is there any way I can
change them all back to be Just the name of the contact??? If not, this
program sucks.

No. You can only change the Email Display As field by editing it directly in
the Contact Record.
You'll no doubt be interested to know that the change you see in the Display
Name was made in response to user requests.
