Email Addresses Becoming Contact Records

For some reason emails from external people are
automatically being added to my contacts as a contact
record.  The only thing that gets populated is the email
address and name???

Any thoughts?

Outlook cannot do that.
Provide detailed evidence that it does.
Include your version.

Outlook 2003 connected to Exchange Server 2003, I will
post examples on Monday.

There are no settings that would permit Outlook to do that.
