My contacts are randomly showing up RED when I display as
a list - how can I control the colors?

Outlook has no such feature or setting. This sounds like a video driver
problem.

Perhaps your initial post was incorrect.
Perhaps this is not random after all. You just thought it was.
Contacts listed where and in what version of Outlook?
Have you cleared your follow up flag settings?
