attaching to contact info

is there a way to have all email that go out to contact
get attached to that specific contact, automaticaly?

You did not post your Outlook version.
In current versions this occurs already. Look at the Activities Tab in the
Contacts Record.

Just use Field Chooser to add any date sensitive field (such as modified
date) to the header, then sort by that field.
