In OL2002, I am trying to paste a string (", GITF") into the categories
field.  I copy the string from an existing contact, go to the target, attempt
to paste and get the following output in the categories field:
#OUTLOOK#

Any help is most appreciated!

Regards,
Bob Thurmond

Try this:

view the Contacts in Phone List View.  Then group by Category.

Drag people from category None into the Category you want them in.  You can
drag heaps of them at once.

Hope this helps.
