How do I put my e-mail "To" list in "last name first" alphabetica.

When I hit the new e-mail button to compose an e-mail and then hit the "to"
button for my list of e-mail addresses, the alphabetical list changed from
last name first to first name first alphabetical order. How do I get the
list back to last name first alphabetical order?

Doubt this happened all by itself for no reason.
