I have 300 subfolders, or may be more, and I don't know which ones are not
checked as "email sub-folder".

Has anyone out there have a program to
check Checking all subfolders as email address books?

Better yet, has anyone got a way to change the default behaviour of OUTLOOK
so that as new subfolders are created, the"email sub-folder" is always
checked?

Why do you have 300 contacts folders? Use categories and reduce the number
of folder to a handful, at most. (I'm not even sure the address book can
display that many contacts folders.)
