how to stop email from being added to contacts

Outlook 2002.  New addresses automatically are added to contacts - this is
annoying since I have to go A-Z to clean the contacts every time.  
Alternatively, is there a way to "spot" and clean just the new contacts?

Also, is there a way to "name" new contacts my way as opposed to the name
under which they are sent - often nickname or business name which I do not
want.

Since Outlook has no feature to do this, you may have to do some digging to
discover what is doing it -- an addin? some code you wrote and forgot about?
