i am gathering email addresses, trying to ideally set up database
with following fields

organization/ church name, webpage, church phone, postal code,
ministry area, if they're a leader or vollunteer, name, actual email
address

i want to be able to click, and then get all people in the same
church,  or click and then again have the list sorted by ministry
area, or simalar postal code

is this possible?

Yes it is.  Use the Phone List view as it gives you a table.

You may need to firstly turn on Advanced Toolbars so you can see the buttons
for the next few functions.

Click the Field Chooser and Group By buttons.  Now you can add additional
fields to the view by dragging the column headers onto the table, sort by
clicking a column header and group by dragging a column header into the
Group By Box.

You can also make you own new fields - New Fields on bottom of the Field
Chooser window that pops up.
