Disable "To" field

Hi, I am just wondering how to send out a form without having to type in a
receipiant's email address.

I want to create the form such that it does now have a To or CC or Bcc
field, and when the user click on the "Send" button, the message and its
contents will be sent to different employees.

It was suggested that I use Item_Send, however I am not clear on how that
works and how to programmally send an email.

Any help will be gladly appreciated
