email form data exported out to .csv or .xls?

Can email form data be set to be exported out to a set file, and each
subsequent email form received in have the data extracted to the same file?

This would be nice for say an email survey form, with results being sent to
an excel file or .csv file, which then could be used to filter & graph the
data.

any suggestions?
