In contacts, I am able to print a medium booklet of my contacts.  I
print this out occassionally for my office and the booklet usually
consist of 30 pages. If I make a change to one contact on page 15, how
do I print just that page and not the entire booklet again.

The print option only gives me all or selected, but not print page ?  Is
there a way to set that up?

Thanks.

Try creating a new contact folder, drag a copy of the changed contact into
that folder, and print with that folder as the data source.  Then delete
the folder.

Just a guess, no having used the print utility you are using.
