I want to track Adobe and Autocad as well; is this possible?  Is there any
software in existence that can help me to do so?

AutoCAD has or had an addin that wrote out the necessary journaling
information. I'm not sure if it still exists.

To journal an outside application that application must be automated to
track whatever events are being journaled and write out a log file in
specified format and location that Outlook can read on startup to parse the
journaling information.
