I have spent considerable time creating colors to color-code specific
appointments in my schedule. Trouble is, I'm upgrading my computer and don't
want to spend that time again. Is there a way to copy these settings?

What settings? The color set for an individual appointment isn't a setting. It's part of the appointment's data itself. As long as you continue to use the same .pst file or Exchange mailbox, the data isn't going to changte.
