Had a few problems with Office 2003 and did a complete uninstall of all
sections. Re-installed Office 2003. All documents remained, except Outlook
2003 e-mails/accounts etc. Have searched for the .pst file and it also looks
to have gone. Any thoughts or ways to get back e-mail that were in Outlook???

Odd, Outlook should be storing the data at:

\Documents and Settings\<userid>\Local Settings\Application
Data\Microsoft\Outlook

and/or

\Documents and Settings\<userid>\Application Data\Microsoft\Outlook

The directories Local Settings and Application Data are hidden and are not
traversed by default when performing a search in Windows Explorer.

ps - mail, calendar, tasks, contacts, .etc are stored in the *.pst file.
