Check your computer BIOS outlook gets its day/date from there.
Okay, everybody, let's try this again.
With the date having been inadvertently set incorrectly, can one go back
into the sent emails and correct the date?

You won't be able to alter the date stamps on existing messages. There's no
way to modify the headers in Outlook.
