How can I save the "outlook.NK2" file on the server? Would like to store it
with My Document folder that is stored on the server. This way when I VPN
into the server and open outlook I will have all my nicknames.

Pedant alert: the NK2 file is not a "nickname" file, it is the
autocompletion cache.  Outlook 2000 had a nickname file whose file type was
.NICK.

You cannot change the location of the NK2 file.  It must reside in
%AppData%\Microsoft\Outlook.  If you had a roaming profile, this folder
would move with you from machine to machine because it would be downloaded
from the server when you log in and saved to the server when you log out.
