I just installed outlook 2007 and set it as my default before I realized it.
It downloaded all my SBC / ATT email and removed it from their server. Is
there a way to put the messages back on the server? (About 900 messages) I
already set the option to "copy" messages to outlook, but after the fact.

You would have to forward them back.
You have set OL accounts to leave a copy on the server?
'Copy to outlook' ?
