The network name of my Exchange Server is different outside the firewall. Now
I've upgraded to Outlook 2003, I want to access the server over HTTP
(especially when away from the office), but I need to change the exchange
server name from it's old, internal NetBIOS name to the new, firewalled FQDN,
which is different (but resolves to the same server).

Put simply, I need to change the name of the Exchange Server, knowing it
will resolve to the same server. How do I do this?

If you are the admin and looking to automate this task:
Google for Outlook Profiler.
