Are you using Word as the Editor? If yes, then you must create your
signature in Word.

The signatures are there, I just don't get the option to
select one from a pull-down window in OL. If I choose a
default signature, I can right-click on it and change
it. If I don't choose a default, then I don't have the
option of inserting one. Any clues?

You must have a default signature defined in Word to use it.
