Tried renaming normal.dot, yes. Looked for email.dot to do same but was
unable to locate it in Search, even with looking in hidden and system files.
Also tried setting the default font in Format > Font...
In a message, clicked Format > Style... then chose default style ("LSL",
client's registered name for Office install), Modify, Font, and selected
appropriate font.
Twice Word has asked me if I want to save changes made to email.dot, twice
I've entered "Yes", exited and reentered, and still the default font for
messages is incorrect.
This system may be having some other corruption occurring (looking into it)
so perhaps this is related. Or, perhaps there's one setting somewhere being
overlooked which needs to be activated.
Thanks for feedback.

Been a long time since I used Outlook 2000, but as I recall, the settings
for WordMail are actually stored in normal.dot (previously they were stored
in email.dot) and configured from within Word: Tools > Options > General >
Email Options... > Personal Stationery Tab.
