How can I create a rule so that all messages I send are also copied
into my inbox, rather than my sent mail file?

Create a rule with no selection criteria (Outlook will warn you that the
rule will apply to all message) that copies sent mail to your Inbox. Turn
off the option to save sent stuff to the Sent Items folder also.
