Does anyone know if it's possible to use a standard mail format (e.g.
HTML or RTF) for most messages, but to have messages to a specific
contact default to Plain Text instead?

Its Ok, I found it...its well hidden though!

You need to open up the contact, double click the e-mail address, and
you then get the option.
