automatic junk mail filter getting out of hand

Outlook automatically sends some email addresses the Deleted Items folder.
It used to only be email that had "sales" in the return address.  After some
update some time ago Outlook has really started to go crazy with the auto
filtering.  So much so that I now have to look through my deleted items
folder and add things to my Exception list every day.  I spend half my time
filtering junk mail, and the other half whitelisting valid email.  Is there
any way to stop the auto filtering?

It's impossible to say without knowing your Outlook version.

Actions>Junk E-mail>Junk E-mail Options to adjust the level of checking.

I am using Outlook 2002 and I do not see these options.

Outlook 2002 does not have any junk filter worth spending time on. You'd be better off getting one of the free tools listed at http://www.slipstick.com/rules/junkmail.htm

Outlook 2002 doesn't have a Junk Mail filter that moves messages from Inbox
to another.  Outlook 2002's junk mail filter will only color the subject
lines of messages containing suspected junk and you can turn that off easily
with Tools>Organize.

If you are having mail moved to the Deleted Items folder, then you must have
a rule or add-in doing it.
