Just create a new mail profile. All existing data and email accounts will remain tucked away for access through the profiles created earlier for that user.
Or, better yet, give the new user their own WIndows login.

where do I create these profiles?
Just create a new mail profile. All existing data and email accounts will
remain tucked away for access through the profiles created earlier for that
user.
Or, better yet, give the new user their own WIndows login.

You can create a new mail profile in Control Panel, using the Mail applet. It's under User Accounts if you don't use the classic view.
