Select Names list -- add "Category" column?

Outlook 2003

When I'm searching for a name/e-address for the To or CC line of an
email message, I click on "To..." etc. and the "Select Names" dialog
comes up.  This dialog is not particularly helpful if I can't think of
the recipient's name offhand.  It would help to be able to list other
fields in this dialog, such as Categories and Company.  Can these be
added to this dialog?  (Similarly, can the "E-mail type" column be
deleted?  It is not particularly useful.)

no; no. You can use search - click on advanced, find.

find the contact in contacts then, actions, new message to (or right click,
new message to)
