How to set view default to color instead of black & white?

Powerpoint and Excel do not display color fills or colored text on my screen,
but does show in Preview and when I print. I can reset Powerpoint View to
color, but it will not stay as my default view. As soon as I view slideshow,
the display reverts to grayscale.

How can I set the default view to color and is there anyway to get the color
to display within my Excel?

Which version of Office do you use? Please have a look at the settings of
the operating system, whether any "high contrast" settings (normally used to
help visually impaired users) are set.
