How do i ensure that the only way to go from one slide to another, backwards
or forwards, is the press on a control or graphic in the slide,
click the mouse on anything else and nothing happens

Patrick,
Go to Slide show - setup show - choose the radio button Browsed at a kiosk.
That should eliminate all navigation using any means, it's up to you to
provide an action button or graphic with an action setting to navigate. When
applied to the master slide you will only need to do this once.
