I have a 16-page booklet and that would be too big to just fold and staple.
Where is the option to print in smaller 4 or 8 page bundles I can fold and
staple? Or do I have to seperate it myself to print it the way I want to?

16 pages is four folded sheets. Shouldn't be too thick. Do you want the pages to
be in the correct order? When you have 16 pages, pages 1 and 16 are the front
and back. Take a look at print preview, there is an icon that will let you see
what page will be printed with what page.
