I'm not clear on what you are asking about. Please post the version you have
and if this is a web publication or a print publication and state the work
steps you are using to recreate the issue.

This a web site I am putting together using publiser 2003. I made a text
box on my home page clicked on hyperlink and went to e-mail on the left hand
panel. I entered mailto in the e-mail box saved the work and then did a web
preview of the site. It was then I learned that the e-mail box titled From;
had my companies e-mail address in it, which I could not remove.

When setting the mailto link you only set the address to which the mail goes
to. Not a from, the from comes from the site visitors email client when the
link is clicked.
I can only assume that you are at work using your work email client when you
test the web page which means that is the from your email client uses when
you click the link.
Test the page from your home PC and you'd find the from becomes the email
address you use there. Assuming this is what you are doing please keep in
mind that the page visitor is supposed to be the from address.
