When an email is activated from the hyperlink instruction from my website,
the 'To' line says 'Home' rather than the email address.  Has anyone any idea
where Publisher (2000) is getting it from?  Looking in the html the link as
in other instructions says my email address.  I succesfully added a 'Subject'
line - but why Home?

I presume you inserted a code fragment to create your email. Please post it
so we can see what you did, or post the URL of the page where the link is.
Feel free to mung the email address. Or if you inserted the email hyperlink
the "normal" way, then post what you inserted. Either way, we don't have
enough information.
