I want to print a 6-page tri-fold brochure that is 8 1/2" X 11" when folded
(11" H X 25 1/2" W when unfolded). Anyone know how I would set up page for
this?

Do you have a printer that will accept 25½ stock? If you do, setup the printer
first. Use the  Arrange, page layout and grid guides. The grid guides should
have 3 columns.

My printer does not accept this size. I usually convert to a pdf  file
(Cutepdfwriter)and send brochures to a commercial printer. I want to sent up
publisher for this size. We usually do 4-page brochures but in this case need
a 6-page brochure.

You would still have to setup the PDF printer or download a printer driver that
will accept the 25½" paper. (You don't need the physical printer.)  After that
Publisher will go along with the custom printer setup.

What version Publisher? Microsoft has a PDF add-in for Office 2007.
