How can I stop Word reverting to another font when I am typing

When I am typing in Word I sometimes delete a word or space only to find that
a whole paragraph leaps back into Times New Roman 10 italic, when I was
happily typing in Arial 12.  Sometimes when I cut and paste within a document
the font changes.  Sometimes when I insert a file into a larger file the font
changes.
It drives me mad. What can I do?

Thanks it seems to deal with some of the trouble, but not with the first
problem - delete a space and the whole paragraph changes.  I'll work my way
through the article, though.
