Why does Word suddenly bold or center everything? Bullets disappea

Sometimes when I select and bold or center one word or one line, Word will
suddenly bold or center EVERYTHING in my document? I can get out of it if I
immediately click Undo. Then it rights itself, and the text I selected to
bold or center is correct.

I have also had problems where I open a saved documents, and the bullet
style is applied to paragraph, but the bullet symbol no longer appears.
