When I try this in Word 2007, the caption feature tries to caption the whole
table 9above or below it) rather than putting the caption in the right
column. Is there a way to force Word to put the caption in the right column?

Hi Craig,
There are a couple of ways to do it.
This tutorial on using the Word 2007 Equation Editor can be helpful

including the link for equation numbering and cross referencing.
For creating a reusable table set to keep equation captions on the right the steps in the demonstration of numbered equations here
may help.

g.aspx . The Caption field would be a variation
of the numbering approach shown there.
After inserting a Caption for an equation, cut and paste it into the right hand cell of a one row table, then save that table with
an empty Equation control as a Quick Table that you can reuse.
