Why do special characters get translated in email?

When a friend writes his letters in Word and then copies them into his email,
the special characters get changed.  Why?

He's not using the same font you are.

He is not using the correct encoding to preserve the special characters.
Many special characters will not make the transition to "plain text"; you
need to use Rich Text or  encoding such as UTF-8.
