on my job someone made an assignment sheet that has some fields protected
with a password. now they decided to make a change to the sheet that has been
used for over 15 years. the person who made the sheet is dead and the
password went with him.
question : Is there a way to either retreive the password he set or disable
it and put another in replace of it.

Since it's in use, you apparently can open and view it, right? Try copying
the entire document (CTRL-A, (select all,) CTRL-C (copy), open a new
document, and use CTRL-V to paste into it. Then save it with a different
name.
From there you should be able to turn it into a template again; just keep
using new names.
